Parallels Desktop fully supports the direct installation of Mojave, relying on the Recovery partition that’s part of macOS. With Parallels Desktop and Mojave set up, you can decide later if you want to pay after the trial expires. That’s partly because it becomes harder to obtain an older macOS installer after Apple updates to the next release.
